Why a Spirits-Specific Product?

At 40% ABV and above, the extraction rules change completely, and a dose worked out for wine overshoots. EBX #410 is built for spirits. Wine-based tables and tools, including Amedee's conversion table and simulators, don't transfer to spirits, so start with a small trial.

What Is It?

Liquid oak extract, made by a cold-water, low-pressure method from the same precious oak as some of the finest barrels: an aqueous solution of the best flavor attributes of French or American oak heartwood. It's organic.

You wouldn't want essence of green, sappy oak. You wouldn't want a product made by a greedy method that extracts EVERYTHING for the sake of yield. And you wouldn't want ingredients you didn't know were in there. The EBX process, at low temperature and low pressure in reverse-osmosis water with no solvent, gives unrivaled complexity with no astringency or bitterness.

The 5th generation of the Radoux coopering family in France has been developing this since around 2012. They've found oak extract is roughly 100 times more efficient than cutting down a tree to make ten barrels.

Questions & Answers

I brew beer or distil spirits. What changes?

The oak is the same; the liquid is very different. At 40% ABV and above, extraction is fast and pulls compounds that would stay in the wood in wine, including whisky lactones, so a dose borrowed from a wine protocol will overshoot. EBX #410, a liquid oak enhancer, is made specifically for spirits, and format choice matters too, since small barrels and inserts behave differently at high strength. Some products are marked "not Codex" because they are built for these uses; dose windows are narrower, so always bench trial first.

Can I use tannins in beer, cider, spirits or non-alcoholic drinks?

Yes, through ranges formulated for each medium rather than wine products used elsewhere. In spirits, tannins give oak character without a barrel or alongside a smaller barrel program. In beer and cider they help with oxidation, haze and depth in aged styles. For non-alcoholic drinks there is a dedicated range (Harmony, Radiance, Shield, Velvet) to restore body and persistence lost with the alcohol. Alcohol level changes how tannin dissolves and tastes, so wine doses don't transfer directly.
