Questions & Answers
I brew beer. What changes compared with wine?
The oak is the same, but beer is a far less forgiving medium. With lower alcohol and a lighter phenolic background, astringency that would go unnoticed in a Cabernet becomes a fault in a saison, so the dose window is the narrowest of any beverage. The most common uses are protection against oxidation and staling, haze and colloidal management, and building depth in aged, sour and barrel-styled beers. Some products are marked "not Codex" because they are made for beer rather than wine; always bench trial first.
Can I use tannins in beer and cider?
Yes. In beer and cider, tannins are used to guard against oxidation, help manage haze, and add depth to aged and barrel-styled products, using ranges formulated for these drinks rather than wine products borrowed from the cellar. Because alcohol affects how tannin dissolves and how astringent it tastes, a dose taken from a wine protocol will not behave the same way. Start low and trial on your own base.
