The world of barrels just got more exciting!
As you know, the time in the barrel is for two general purposes. The extraction phase is step one. The barrel surrenders a certain portion of itself to the wine in a symbiotic exchange which imparts tannin into the wine. This is for support of the fruit, clarity, color, and structure of the wine.
But the part that we wait for is integration of the oak due to barrel respiration. Some types of oak integrate a little faster than others. And this is the process which requires a micro- level of slow and steady oxidation to round the edges of the structure, like the final sanding before finish is applied to a future heirloom.
You can shorten your barrel aging by as much as 40% or as little as 15% by choosing between a few JABB options.
