Fermentation Tannin (AF, MLF):
This could be an hour long discussion on its own. During fermentation, you should use tannin from oak or other natural sources. If you are not, you are almost certainly leaving some quality on the table.
But what should you use?
Condensed or Ellagic, Simple or Complex, Hydrolysable or not? It sounds hard. It's really not. And our pricing means that you don't have to wait for free shipping. You can order any time and not miss a few dollars' savings.
It's really as simple as this: What are trying to do? And do you need just oak tannin or a complex tannin?
If you are looking to stabilize color, combat acidity (or lack thereof) and add mouth feel, go old school during fermentation and just use chips.
If you need anti oxidative properties, want what oak can do as well as what other plant- derived tannins can do for botrytis, aromas, color, etc. look at our fermentation powders.
If you just want a sacrificial tannin to help preserve the potential for aromatics, default to chips in the fermenter.
If you want to eliminate a little bit of green character, again- go with oak tannin.

This product is pure oak tannin in powder form.
Tannin 810 is a powder polyphenol concentrate from French oak heartwood (Quercus robur / Quercus petraea) which has undergone a specific maturation processing.
This level of quality has been specially developed for applications in the wine industry sector and spirits (white spirits consumed brown) for the optimization of the "couple" (or union of) wood & alcohol.
Due to a unique manufacturing and controlled process, Tannin 810 protects from oxidation and reinforces the structure of the wine.
With Tannin 810, the wine is structured around a perfect acidity and a low bitterness. TANNIN STRUCTURE POWER is a 100% natural product extracted from renewable plant materials. No preservatives or additives are present in Tannin 810.

Use:
Some will add directly to the fermenter and pump over or punch down. The preferred method to use Tannin 810 is for it to be dissolved in the form of a premix with the wine or alcohol to be treated. We recommend to perform this premix in proportions of 5 to 10%. It can be as well dispersed in RO water, cold or preferentially hot. We recommend to mature this premix for several hours before performing the addition to the total amount of wine / alcohol. Respect for this procedure significantly affects the results.
Level of use: on reds and sweet white wines: during vinification: 10-20 g/hl during aging: 5-15 g/hl on whites: 2-10 g/hl

Vinification Tannins in Powder or Liquid Form
EBX-VBX is a superlative, STANDALONE blend of carefully selected hydrolysable and condensed tannins with a low to high average molecular weight specially purified for applications in the wine industry. Due to a delicate light toasting process EBX-VBX exhibits a rich aroma. Designed for Flash Detente / Thermovinification to stabilize color. Has a higher Galic Acid equivalent than competing products. The dose rates of this tannin is extremely competitive and does not require an accompanying product to be effective.
EBX-VBX is a 100 % natural material extracted from renewable plant materials using strictly controlled equipment.

USAGE
EBX-VBX has important antioxidant properties and is as such a powerful aid for color stabilization.
EBX-VBX is used as an aromatic enhancer in white and red wines lacking sufficient tannins. By adding EBX-VBX a more full-bodied taste is obtained.
To prevent local over dosage EBX-VBX is best added as a 3-10% solution.
Our 20% aqueous stock solution can be made on demand by our services. EBX-VBX can easily be dispersed in cold or even better in hot water. EBX-VBX can also be dispersed in wine if necessary.
Due to the differences in density of the powders used in the mix, resulting in a possible nonhomogeneous product, the entire powder packaging should be used at once. This of course do not apply for the liquid form.
STORAGE AND HANDLING EBX-VBX in powder :
does not require special storage conditions and has a shelf life of min. 5 years if stored in a dry area in its original closed packaging. The product is not frost sensitive and normal ambient storage temperatures (i.e. 5-25°C – 40-80°F) suffice.
EBX-VBX in aqueous solution :
to be use rapidly to avoid any sedimentation of the tannins.
The Liquid form is sensitive to frost, normal ambient storage temperatures (i.e. 5-25°C – 40-80°F) suffice.
Storage of EBX-VBX open to the atmosphere can result in uptake of contaminants from the surroundings. Therefore we recommend on using the entire bottle at once or in a very short period.

EBX liquid tanin are best during maturation and before/ at bottling. The oenological tanin of EBX oak are produced from heartwood of French oak or American oak.
