Fermentation Tannin (AF, MLF):
This could be an hour long discussion on its own. During fermentation, you should use tannin from oak or other natural sources. If you are not, you are almost certainly leaving some quality on the table.

TANNIN 810
TANNIN STRUCTURE-POWER
Tannin 810- TANNIN STRUCTURE POWER
This product is pure oak tannin in powder form.
Tannin 810 is a powder polyphenol concentrate from French oak heartwood (Quercus robur / Quercus petraea) which has undergone a specific maturation processing.
This level of quality has been specially developed for applications in the wine industry sector and spirits (white spirits consumed brown) for the optimization of the "couple" (or union of) wood & alcohol.
Due to a unique manufacturing and controlled process, Tannin 810 protects from oxidation and reinforces the structure of the wine.
With Tannin 810, the wine is structured around a perfect acidity and a low bitterness. TANNIN STRUCTURE POWER is a 100% natural product extracted from renewable plant materials. No preservatives or additives are present in Tannin 810.
Properties:
Aspect: dark brown powder
Geographic origin: 100% French oak
Botanical origin: Quercus robur/ Quercus petraea
Odour: oaky
Tanins: min 65% on dry material
Moisture: Max 2%
Ashes: Max 4%
Preservatives: NONE
Shelf life: min 5 year at room temperature into closed original packaging
Use:
Some will add directly to the fermenter and pump over or punch down. The preferred method to use Tannin 810 is for it to be dissolved in the form of a premix with the wine or alcohol to be treated. We recommend to perform this premix in proportions of 5 to 10%. It can be as well dispersed in RO water, cold or preferentially hot. We recommend to mature this premix for several hours before performing the addition to the total amount of wine / alcohol. Respect for this procedure significantly affects the results.
Level of use: on reds and sweet white wines: during vinification: 10-20 g/hl during aging: 5-15 g/hl on whites: 2-10 g/hl
Packaging : Tannin 810 is available in 0,5 - 5,0 - 20,0 kg. Other packaging is available on demand.

FERMENTATION and ANTIOXIDATION TANNIN:
EBX-VBX
Vinification Tannins in Powder or Liquid Form
EBX-VBX is a superlative, STANDALONE blend of carefully selected hydrolysable and condensed tannins with a low to high average molecular weight specially purified for applications in the wine industry. Due to a delicate light toasting process EBX-VBX exhibits a rich aroma. Designed for Flash Detente / Thermovinification to stabilize color. Has a higher Galic Acid equivalent than competing products. The dose rates of this tannin is extremely competitive and does not require an accompanying product to be effective.
EBX-VBX is a 100 % natural material extracted from renewable plant materials using strictly controlled equipment.
PROPERTIES
Appearance: Nonhomogeneous mixture of powders or Powders in aqueous solution (Liquid)
Botanical origin : French oak, Gall nut, Tara pod, and Vitis vinifera seed extracts
Odor : Slight in solution, typical
Polyphenols (on dry material): min. 75 %
Moisture: max.9% (in powder)
Ash content: max.2%
Heavy metals: max 20 ppm
DOSAGE
on harvest : in tank :
Powder : 25-120 gr/tonne 2-20 gr/HL
Liquid : 120-600 ml/tonne 10-600 ml/HL
USAGE
EBX-VBX has important antioxidant properties and is as such a powerful aid for color stabilization.
EBX-VBX is used as an aromatic enhancer in white and red wines lacking sufficient tannins. By adding EBX-VBX a more full-bodied taste is obtained.
To prevent local over dosage EBX-VBX is best added as a 3-10% solution.
Our 20% aqueous stock solution can be made on demand by our services. EBX-VBX can easily be dispersed in cold or even better in hot water. EBX-VBX can also be dispersed in wine if necessary.
Due to the differences in density of the powders used in the mix, resulting in a possible nonhomogeneous product, the entire powder packaging should be used at once. This of course do not apply for the liquid form.
STORAGE AND HANDLING EBX-VBX in powder :
does not require special storage conditions and has a shelf life of min. 5 years if stored in a dry area in its original closed packaging. The product is not frost sensitive and normal ambient storage temperatures (i.e. 5-25°C – 40-80°F) suffice.
EBX-VBX in aqueous solution :
to be use rapidly to avoid any sedimentation of the tannins.
The Liquid form is sensitive to frost, normal ambient storage temperatures (i.e. 5-25°C – 40-80°F) suffice.
Storage of EBX-VBX open to the atmosphere can result in uptake of contaminants from the surroundings. Therefore we recommend on using the entire bottle at once or in a very short period.
PACKAGING EBX-VBX Powder is available in 500 grs pots
EBX-VBX Liquid is available 1 liter / 5 liters / 20 liters.

What is EBX Liquid Tanin?
Simply put, its an all- natural, barrel augmentation or supplement in a bag. It's tannin made from the same precious oak as some of the finest barrels. Powdered for easier shipping, you add water to create an aqueous solution of the pure essence of the best flavor and aroma attributes of oak. The liquid form allows a great ease of use, safety for the people who use it, and a quick and precise dosage. Its total and immediate solubility avoids the formation of lumps or precipitates and any additional filtration step.
The cooperage quality wood is matured naturally on site. The wood for the EBX tannin then goes through grain classification for uniform density, cutting to uniform dimensions, and exact, repeatable toasting. This prepares the wood for extraction.
Our extraction and concentration methodologies naturally guarantee the stability of the product, without any preservatives or additives. The EBX extraction process at low temperature and pressure induces unrivaled complexity combined with a low level of astringency and bitterness. This narrows the range of which flavors you are adding and limits that to good changes in your wine.
We use a gentle, low- yield, priopretary process to collect the exact range of flavors which your wine could extract from oak and not the harshness that competitors sell.
EBX liquid tannin are best during maturation and before/ at bottling. Consider these formulas to add oak character to bolster aroma, structure, or finish of an otherwise good wine.
The naturally present components of oak are extracted in a gentle way and its original qualities are thus respected.
EBX oenological tanins can be used for the clarification of musts or wines. Due to its natural antioxidant role, the tanin extract EBX preserves the wines treated with oxidative phenomena, stabilizes their color durably and allows them to express their original qualities more intensely.
Which one do I need?
It's easy to understand. The numbering system for these is as follows:
French is 1. American is 2. The next numbers are for toast levels with zero meaning no toast.

For White and Rose' wine:
To stabilize clarity, preserve color and the potential for aromatics, use 3 to 10 ml/Hl of 10, 12, or 13. Use 10 for nose, 12 or 13 to soften.
For Reds:
Enhance the nose, structure, roundness or finish. use 15 to 25 ml/Hl of one formula or a blend to reach your target. Nose is 12. Structure is 13 or 22. Roundness, sweetness and a longer finish is 14 and 22.
For big, bold, ripe reds, try 14 and 22. These combination in ratio that you prefer will support the middle and lengthen the finish.
For Port: 22,23,24, or 14.
EBX Liquid Oak is now sold in powder designed to make one liter of liquid solution from 200 grams of powder.
A 225L barrel is roughly 3500 square inches inside. Picture your set of tank staves lying flat, butted up to each other. Now measure out 10.75 square feet. At this point, remember that wine touches all sides of this stave. Submerged in liquid, this is (very?) roughly the surface area of a 225L barrel.
Working from this, one liter of liquid EBX solution made from 200 grams of powder is equal to about three new 225L Oak barrels.
Since the new barrel impression is the most relatable, calculate from that.
