"A man makes his own economy". Improve yours with an increase in quality and a decrease in labor cost! You are looking at a two- man crush operation with higher yields and lower solids. Man hours can decrease during harvest when your equipment is as easy to clean as ours, too.
It all starts with the Hopper
The hopper is the key to best results from your destemmer. It also comes in handy when feeding the press either whole cluster fruit or fermented reds dumped from bins. Height adjustments are made easily with your forklift.
The single most important reason to own this hopper:
ANYONE'S Destemmer/ Crusher will operate better and give you something alot closer to a perfect result when fed a constant speed, proper drop of fruit. You will achieve 90% of the result of sorting simply by using this hopper and finding the ideal feed speed into and out of your destemmer. Do you you still want to post- sort? That's OK. We sell sorters, too. But this hopper is a better use of your capital than buying a sorting table alone for use after a lug- fed destemmer, because this hopper also pays for itself when it is time to feed fermented reds back to the press.
We can work with any sized commercial winery, but we excel with wineries where the emphasis is on the highest possible quality while fringe costs associated with that at other wineries are reduced. ...........Then the the Destemmer/ Crusher
Our Puleo Vega series destemmers are rated in tons per hour. Some of the best winery equipment you can buy, this popular machine boasts some of the lowest noise levels and broadest range of effectiveness throughout its operating speeds. It is frequency controlled to lower the number of mechanical parts. The base or stand is included and fully adjustable to work over 1/2 ton, 1 ton bins, and our must pump. You have the option to skip the must pump and destem onto a sorting table (then through crush rollers?) or into a bin for small lot fermentation.
You will have the option to crush, de- stem, or both at the same time. This works with all types of grapes and can be sized for very large or very small varieties of grapes.
Another very important point about destemmer/ crushers made by Puleo and Carlsen:
Our speed control is a frequency drive. What this means to the user is that our machine does not rely on a knob with a pulley and a belt to control speed. This is an especially important point as the aforementioned configuration wears out; whereas a frequency controller does not endure physical wear.
Furthermore, our electronics allow you to find that perfect speed of throughput from zero to maximum in any size detemmer that we sell.
Our crush rollers are easily adjusted or taken out of service in seconds.

Time to Pump Must?
These two items make up the Carlsen must pump system. These machines work together to comprise the most gentle mechanized means of moving crushed and / or destemmed wine grapes to a press or fermenter. Half of this system sits idle for a portion of the year while the other half is earning its keep year 'round.
We have the professionally tested numbers to prove that this system offers the lowest solids, highest number of whole berries and lowest number of broken seeds of any mechanized method for transporting must in the wine industry.
As a footnote; When purchased, the Waukesha quickly becomes the preferred pump for wine transfers, pumpovers, racking, bottling, and barrel topping with its optional pressure controlled switch and barrel topping wand add- ons. This pump will be the work- horse of the winery enabling you to pump must and do your other sorts of work with the strongest, yet gentlest pump in the industry.
Every winery needs a second pump. With this pump first in the batting order, pump #2 can be much less powerful and thus less costly.

"A Press is a Press"
"A press is a press" , says Jim Carlsen, founder of Carlsen & Associates. Our competitors would have you believe otherwise. Of course we all contend that ours are better. Ours are certainly prettier. There is even controversy over the direction of the slits in the drain side of a press drum. Ours is supposedly correct.
There is no magic, no voodoo, no divine intervention or luck in a wine press. The press is the machine that actually has the LEAST to do with overall wine quality. That is not to say that you cannot create winemaking problems with poor technique. You can exacerbate or add complications like phenolics, solid levels, grape seed oil content, oxidation and general degradation of juice if you are reckless with a less than friendly press. You must know your fruit and your press. And that is where our pre- crush training comes in. You will encounter situations where you must be a little gentler, a little more patient, or more aggressive to get what you want out of any press. But most presses will do whatever you ask them to.
As a footnote, our Puleo presses offer axial feed to make fruit processing even easier. Imagine your crushpad running smoother with fewer people. Consider that we are all feeling the effects of what the media calls a recession. What it really is is a time when you should consider ways to make a more competitive product with less labor.
What should I consider when buying a press?
Basket Press or Bladder Press?
A basket press is good for a boutique where maybe one or two varietals is the focus.
For bladder press folks:
1. What size should I get? This is actually the last question you should ask yourself. But it's the first one we sales guys ask you. Sorry about that. Like buying shoes, there are two ways. Do you buy shoes by type/ brand/ manufacturer/ purpose first, then look for your size? I don't. I look for my size first and everything else second because I have HUGE feet. Your winery is not that unusual. Please assume that your size can be had and consider everything else first.
2. Is it easy to clean? If you are doing this yourself or have very expensive labor that question is first. Our side membrane presses are the easiest to clean. We train you on our proprietary, water saving , super easy clean in place method. 3. Is it reliable? As of 2009, we will have gone ten years nation- wide without replacing a bladder. That's because our presses have NO MINIMUM LOADING. And because everything that can go wrong with ours fits in a briefcase; It just doesn't. 4. Can I program it? Our presses are pre- programmed before you use them. There are 12 easy to use automated programs for all of your routine types of fruit and two ways to use it manually for that special lot. It is very easy to use. Remember: Carlsen are the guys who sell the two man crushpad. This is EASY. You can start, stop, inflate, deflate, and rotate all from right here- either manually or on auto- pilot.5. Not your average question, but a solid point: Is there a drain pain with a removeable screen and a float switch option included in the price we quote? YES. Is this pan also useable as a pumpover sump? Yes.
Why do I need a second pump?
One reason that you need a second pump in your winery is simply because you need to pump out your press pan.
