Oak Chips
Fine, Regular, Untoasted or Toasted

- OakPLUS Untoasted French Chips provide enrichment to the aromatic profile, intensification of fruit expression, stabilization of color, structure with increased sweetness and roundness without toasted oak characters. The suggested addition rate at fermentation is 4 to 7 pounds per ton.
- OakPLUS Chips are intended for use in all phases of winemaking. They contribute to the reduction of vegetal characters, bind color, and build middle body and mouth feel when used during fermentation. Post fermentation will tend to offer noticeable toasty oak components, lift the nose and enhance the body of the wine. In addition, it will impart premium oak characteristics. A small amount added just prior to bottling will heighten the finished oak character and leave a lingering toasty quality.Depending on the wine at harvest, clarity or pre-bottling, the suggested ratio of chips to wine will range from 2 to 22 pounds per 1000 gallons. Some clients choose to have their chips bagged in mesh "teabags" holding 22 pounds each for easy addition and removal.
Oak Flour/ Powder

OakPLUS
French Oak Flour assists in masking vegetal overtones, binding
color and enhancing texture. The feel in the mouth is bigger, with a
touch of non-aggressive tannin. The oak flavor is indiscernible, but
the backbone of oak tannin and structure is present, making the future
of the wine bigger and fuller. Ideal for addition at the hopper, its small particle
size makes for easy processing and removal. The suggested addition rate at harvest is 2 to 4 pounds
per ton.
Bag of Blocks

Bag
of Blocks is intended for the winery that desires premium barrel
flavors in their wines but may not have room or the inclination to use
barrels. The 22lb mesh bags contain approximately 62 square feet of
surface area and are best used for post-fermentation wines in tanks.
There is no special system required for use, the mesh bag can simply be placed in a tank and allowed to free float or be tied down. Bag of Blocks large pieces provide similar extraction and flavors as new premium barrels. It is Innerstave’s most cost-efficient method for delivering premium oak flavors in stave format to wine tanks.

Chain of Oak

Chain
of Oak is a through the bung hole delivery system designed
by Innerstave to benefit those winemakers who do not require an intense
oak flavor. This system is winemaker installed and versatile as winemakers
can vary the number of oak links in the chain to obtain the desired
oak impact. Each chain imparts one-third the amount of oak flavor of
a new Barrel Innerstave. Chain of Oak is used most exclusively in barrel aging
programs.
Fan Innerstave

Each
Fan Innerstave set contains 20 square feet of wood,
replicating 110% of the surface area of 225L barrel and providing similar
extraction as a new premium oak barrel. The set is designed for easy
attachment in wine tanks containing fan system hardware and can be applied
in all phases of winemaking.

Tank Innerstave

Tank
Innerstave in any wine (even those portable, stackable, TranStore Tanks we love) tank allows wineries to obtain premium
oak barrel character in larger wine vessels at a cost savings over traditional
premium oak cooperage sources. It is designed for use in all phases
of winemaking in anything from 250 to to 250,000 gallon tanks.
Tank Innerstave is custom-made with a radial design stainless steel support structure for every size wine tank. The design allows all oak and stainless steel surfaces to be exposed to washing devices, enhancing cleanability. Stainless steel, jacketed tanks allow for finite temperature control and increased use of micro-oxygenation to allow the tanks to perform more like wine barrels. The system is designed to impart oak flavor at the same rate as new premium oak barrels.

Innerstave contains 18.16 sq. ft. of surface area. Barrel length
oak staves are held in place in a radial design lining the barrel with
polyethylene rods. The system is inserted into
the opened head of a neutral barrel. Oak extraction replicates that
of a new barrel. The absence of staves at the bunghole and the bottom
lees pool leaves racking and stirring uninhibited. This system is cleanable
with regular barrel cleaning procedures. Barrel Innerstave can be used in all phases of winemaking
and is designed to impart oak flavor at the same rate as new premium
oak barrels. The system works within the framework of a comprehensive
barrel program to augment total premium oak flavor profiles while moderating
the higher cost of purchasing all new barrels.
