Soft, Burgundian rains wash away any existing harshness while generally cooler temperatures allow aging much less like kiln drying. This preserves the best characters of the barrel staves.
Don't fix what isn't broken.
Remond's generally low and slow toasting ends in a less charring effect, allowing the quality of the staves to shine through. Great wood does not need over- toasting. Too much toast puts toast in your nose and hides the fruit.
