Occasionally we get a request to design a crushpad which is capable of handling sorted  premium red wine grapes.

The first step is deciding where you want to sort. Traditionally, I prefer pre- sorting. This means that we intend to sort the fruit prior to destemming. This does not preclude post- destemmer sorting.

The best way to do this is to dump half- ton bins into a receiving hopper, which feeds a constant, metered feed to the sorting table. I prefer a vibratory table which can be positioned before the destemmer and allow time to remove bad bunches of grapes, reptiles, hammers, crustaceans, rocks, etc. Another benefit of the use of a sorter is, as I have always said, no matter the brand of the destemmer, if you supply it  with a constant, metered feed of fruit, it will improve your result.

Ideally, I would skip the second stage of sorting, as it is often redundant. But in the case where you choose to sort after the destemmer, the crush rollers that came with the destemmer can be mounted at the end of the crush rollers.

The fruit is then sorted, destemmed, and crushed (or not crushed) and ready to ferment in a one- ton fermenter, or you can dump half - ton bins into a larger fermentor to avoid pumping must.  You may still want to pump your must. And this can be done at no detriment to quality with your Waukesha.


But one of our very creative customers came up with a way to dump, destem, sort, and crush right into a TranStore tank, which is a multi- functional storage vessel.

Selecting a Pump 12/09/2009
 
     I just had a conversation with a winemaker looking for a pump. After he shopped around, he started to realize that the $13,000.00 price tag on our Waukesha 130 is not as bad as he thought.
    Dont be confused. You still need two pumps in your winery. Just about every operation either does or will. for a second pump, we offer the Yamada series of air- operated diaphragm pumps. These are the most cost- effective and maintenance free pumps in the world. These cost less than the former low- budget leader impeller pumps. Food grade, brick simple and no sparks. This pump is even good in distilling.
     But back to the Waukesha:
     "First the earth cooled. Then the dinosaurs came; But they all died because they were fat. Then came the ice age. Brrrrrrr."- Airplane
     The Alpha and Omega in the single most versatile and gentle and powerful pump in the wine industry is the Waukesha. When coupled to our must sump (about $6,000), it serves as the strongest AND gentlest must pumping system in the world. I personally have seen North Fork Merlot fruit pumped through a 50', 3" hose (up 12 feet also) and the Waukesha- pumped must exiting that hose was as unharmed as the just- destemmed and lightly crushed merlot wine grapes that just fell out of the destemmer- crusher. Ask tom Burns at Boordy Vineyards in Maryland. When he switched to our system, he "definitely noticed lower solids..". That does not happen with rough pumps. 
     When processing white wines:
     Pumping crushed whites directly to the press with our system is a breeze. If your press has axial feed, all the better. Pump the whites into the press and use your Yamada to drain the press pan.
     After Harvest:
     The Waukesha starts to really shine. "The only (transfer) pump in the industry that does not harm overall wine quality is the Waukesha." Chris wirth, Hunt Country Vineyards. Riaan Rousso at Lovingston Winery in Virginia handles his harvest with gravity and bins, but he uses his Waukesha to transfer wine.
     If you could bottle, filter (NOT DE), transfer, top barrels, and pumpover with the same, excellent pump, wouldn't you? I would. And I will.

The Wine Sleeps 12/08/2009
 
     By now, most of the wines in our territory are fast asleep either in barrel or tank and are on the way to becoming another vintage.
     During the coming months, you may have time to think about your wine filtration equipment, pumps, and the general state of your hardware around the winery. We offer complete wine hose assemblies with extra long tri clover hose barbs, double clamps, and collars to prevent dragging damage. The tri clover clamps we sell come with either single or double hinge arrangements, and according to Sean McRitchie, "(These) just rock".  He has yet to break one of ours.
     If you own a Puleo bladder press and a Waukesha must pump from Carlsen & associates, you are enjoying the fact that when you bought the press, for the price quoted, you got the pan and acreen that double as a pumpover sump. And your Waukesha winery do- all pump is smartly handling the task of pumpovers without increasing solids. Well done!
